This mouth watering cut of meat comes from the Top Sirloin Cap. It has excellent marbling with a 1/4 fat cap for that melt in your mouth finish. There's no need to do too much to this cut but salt and pepper then right to the pan. I know these Coulotte's will soon become your favorite cut as they are mine.
